Cabbage dishes can be so boring; most of the time people don’t know what to do with it, and it ends up a boiled lump on a plate. Well, here’s a new way to enjoy cabbage.
2 tsp. coconut oil
2 tsp. lemon juice
1 tsp. minced garlic
½ tsp. salt
½ tsp. pepper
1 large head of cabbage
Non-stick cooking spray or parchment paper
Preheat the oven to 425.
Mix the coconut oil, lemon juice, garlic, salt and pepper in bowl and whisk together.
Spray a cookie sheet with nonstick cooking spray or line it with parchment paper.
Slice the cabbage into ¼ inch thick slices. Lay the cabbages on the cookie sheet.
Brush the tops of the cabbage slices with the oil and lemon juice mixture. Place the cabbage tray in the oven.
Bake the cabbage for 18-24 minutes, until inner layers are soft, and the outer layers and top start getting browned and slightly crispy.
Remove from the oven and serve.
