Diabetes Recipe: Sweet and Savory Avocado and Egg Sandwich

This hearty sandwich will explode with flavor in your mouth. It’s one of those ‘breakfast is good any time of the day’ meals.

4 Sprouted Wheat Sesame Bagels
8 slices turkey bacon
Nonstick cooking spray
1/4 cup diced onions
8 eggs
1 avocado
1 tsp lemon juice
1/2 - 1 tsp honey

Split and toast the bagels. Lay them on a plate, open.
Heat a nonstick pan over medium-high heat. Add some strips of turkey bacon to the pan, making sure they're not touching. Turn every 1-2 minutes until cooked and crisp. You will probably have to cook them in 2 or 3 batches, depending on the size of your pan.
Without cleaning the pan, add the diced onions and sauté them until they become caramelized. Set them aside.
Again without cleaning the pan, add two eggs at a time (you can add a little nonstick cooking spray if the fat from the turkey bacon hasn't greased it enough). When the egg pairs are done, slide them onto a bagel.
Top the egg bagel with two slices of turkey bacon.
Cut an avocado in half and remove the pit. Scoop the flesh into a bowl. Add the lemon juice and honey, then whisk it up until it's fluffy. Stir in the onions.
Smear the avocado topping on the top of the bagel and cover the sandwich. Makes four servings.
